I was only 2 weeks in to my Weight Watchers journey for Thanksgiving 2015, so I poured over recipes to prepare healthier versions of both traditional dishes and favorite. I LOVE cheesecake and discovered a pumpkin-ginger cheesecake. I remember how delicious and satisfying this was!!! BUT I never made it again nor did I save the recipe 😢. This Thanksgiving, I could not find this jewel, but I did discover this Low-Fat Mini Ginger Pumpkin Cheesecake on Project Pastry Love website. It was SO good and SO easy to make!!! It is definitely one of my new favorites!!! Best of all, it’s guilt free with an estimate of only 3 WW points.
