Greetings on this thankful Thursday!!!

Thank you Steven, for being such a great sport and trying all of my new plant-based recipes with a smile on your face. He is always a great supporter of my endeavors, and is now along for the ride during my Forks Over Knives Fresh Start Challenge. The challenge consists of 3 phases: week one is breakfast, week two is lunch, and week three is dinner. It’s been a smooth transition and the recipes are easy AND delicious.

Below are some of my favorite:

Herbed Vegan Matzo Ball Soup
Matzo Balls
“No-Tuna” Salad Sandwhich

All of these are easily incorporated into my WW lifestyle.

Thank you Steven for being my guinea pig as I continue to explore the plant-based & vegan options! After all, Sam I am tried green eggs and ham and discovered he DID like them. He Did!!! He Did!!!
